    Chilli Crab with Cuttlefish Ink Pasta

    An easy tasty meal using fresh mud crabs .

    Once you've cooked and shelled the crab, set aside.

    Add garlic & ginger to hot pan for a minute until fragrant. Add a little tomato sauce, sweet chilli sauce, sherry, sugar and chicken stock powder. Stir for 2-3 mins or until sauce boils & thickens slightly. Remove from heat add a hand full coriander and stir in crab. Spoon over prepared pasta & top with our red coral biscuit tuilles and a little coriander or micro greens. It's as simple as that!

  • Truffle Infused Pasta

    Truffle Infused Pasta: A Quick and Aromatic Dish

    Indulge in the rich flavors of our Truffle Infused Pasta, made from the finest Tasmanian Fresh Truffles. This easy recipe is perfect for a quick yet elegant meal that highlights the aromatic qualities of truffles.

    Ingredients:

    200g Truffle Infused Pasta

    2 tablespoons olive oil

    1 T Garlic

    A splash of white wine

    1 C Thickened Cream

    ½ C grated fresh Parmesan Cheese

    1 tsp Freeze Dried Truffle

    Thinly Sliced Fresh Truffle

    Truffle Oil

    Salt and pepper, to taste

    Fresh parsley or chives, (for garnish)

    Instructions:

    Cook the Pasta: Boil a pot of salted water and cook the Truffle Infused Pasta according to the package instructions until al dente.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

    Add wine and freeze dried truffle. Pour cream and mix well. Add some of the sliced Truffle & Parmesan cheese

    Season: Season with salt and pepper to taste if required

    Serve: Plate the pasta and spoon sauce over the top. Drizzle truffle oil over the top. Garnish with freshly chopped herbs & more sliced Truffle

    Seared Scallops with Truffle

    Seared Scallops stuffed with slithers of fresh black truffles, delish

    To me this is a very romantic dish accompanied by our Fresh Infused Truffle Pasta. What wine would you pair with it?

    RECIPE

    Buy nice plump scallops Local Fishmonger cut nearly in half. Thinly slice fresh truffles & stuff into scallops Drop a little truffle oil inside too. Sprinkle freeze dried truffles over the top, cover and pop in fridge overnight.

    Wind forward - while sipping your desired wine bring a big pot of salted water to the boil. Get your pan hot with a little good quality olive oil and sear the scallops both sides until just cooked ( don’t get carried away with your wine and cook them too much otherwise they will become rubbery) cook your pasta until al dente (see our cooking fresh pasta section for more tips) plate up with a little rocket amongst our truffle pasta place scallops ontop, drizzle with truffle oil and a sprinkling of microgreens and grated Parmesan. Enjoy!!
